Breakfast Pitta To Share

Ingredients
- 2 Mission Mediterranean Herb Pittas
- 4 tbsp olive oil
- 120g[4 oz] spinach, cooked
- 4 medium poached eggs
- 8 basil leaves
- 250g[9 oz] cherry tomatoes
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt & pepper
Instructions
- Preheat the oven to 220c/425f/gas7
- Slice open the pittas, drizzle with a little oil and bake in the oven until toasted.
- Into a frying pan add the cherry tomatoes, vinegar, oil and seasoning. Bring slowly to the boil and cook gently for 3-4 minutes, without tomatoes breaking up.
- Place the spinach evenly over pitta halves, top with basil leaves and spoon over the tomatoes.
- Top with a poached egg and serve immediately
