Falafel, Couscous and Spring Onion

Ingredients
- 4 Mission Pittas
- 4 x 25g[1 oz] falafel
- 85g[3oz] couscous or bulgar wheat
- 40g[1 ½ oz] sultanas
- 2 spring onions,sliced
- 40g[1 ½ oz]bean sprouts,optional
- 2 tbsp lemon juice
- 1 tbsp olive oil
- salt
- pepper
- 100g[3 ½ oz] houmous
Instructions
- Place the couscous or wheat into a large bowl and just cover with boiling water. Cover and leave to stand for 10 minutes. Slice open the pitas.
- Once the wheat has fluffed up add the onions, oil, lemon juice, bean sprouts, sultanas and salt and pepper. Mix well.
- Cut the falafel in half and place into the pitta, add a little wheat salad and then the houmous.
- Serve.
