Falafel, Couscous and Spring Onion

Ingredients

  • 4 Mission Pittas
  • 4 x 25g[1 oz] falafel
  • 85g[3oz] couscous or bulgar wheat
  • 40g[1 ½ oz] sultanas
  • 2 spring onions,sliced
  • 40g[1 ½ oz]bean sprouts,optional
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • salt
  • pepper
  • 100g[3 ½ oz] houmous

Instructions

  • Place the couscous or wheat into a large bowl and just cover with boiling water.  Cover and leave to stand for 10 minutes. Slice open the pitas.
  • Once the wheat has fluffed up add the onions, oil, lemon juice, bean sprouts, sultanas and salt and pepper. Mix well.
  • Cut the falafel in half and place into the pitta, add a little wheat salad and then the houmous.
  • Serve.
