Herby Mozzarella and Roasted Vegetable Pittas

Serves 4

Ingredients

  • 4 Mission Roasted Red Pepper Pitta
  • 1 small aubergine, sliced into 4cm[1 ½ in] strips
  • 1 courgette, sliced into 4cm [1 ½ in] strips
  • 1 red pepper, sliced into 4cm [1 ½ in ] strips
  • 1 yellow pepper, sliced into 4cm [1 ½ ] strips
  • 4 tbsp olive oil
  • Salt & pepper
  • 4 balls 120g [4oz] buffalo mozzarella, sliced
  • 2 tbsp parsley, chopped
  • 4 basil leaves
  • 4 sage leaves
  • drizzle olive oil

Instructions

  • Preheat the oven to 200c/400f/gas 6
  • Toss the vegetables in the olive oil and season well
  • Place into the hot oven and cook until browned and cooked through
  • Cool slightly and then add the parsley and arrange on top of the pittas.
  • Add the mozzarella, sage and basil leaves and drizzle over a little oil.
  • Serve warm or cold
