Herby Mozzarella and Roasted Vegetable Pittas

Ingredients
- 4 Mission Roasted Red Pepper Pitta
- 1 small aubergine, sliced into 4cm[1 ½ in] strips
- 1 courgette, sliced into 4cm [1 ½ in] strips
- 1 red pepper, sliced into 4cm [1 ½ in ] strips
- 1 yellow pepper, sliced into 4cm [1 ½ ] strips
- 4 tbsp olive oil
- Salt & pepper
- 4 balls 120g [4oz] buffalo mozzarella, sliced
- 2 tbsp parsley, chopped
- 4 basil leaves
- 4 sage leaves
- drizzle olive oil
Instructions
- Preheat the oven to 200c/400f/gas 6
- Toss the vegetables in the olive oil and season well
- Place into the hot oven and cook until browned and cooked through
- Cool slightly and then add the parsley and arrange on top of the pittas.
- Add the mozzarella, sage and basil leaves and drizzle over a little oil.
- Serve warm or cold
