Mediterranean Couscous Wrap

Ingredients
- 1 Mission ‘Wheat & White’ Deli Wrap
- 1 clove garlic
- Mixed peppers, aubergine and courgette
- Salt & pepper
- Fresh coriander
- Couscous
Instructions
- Sauté some garlic for a minute and stir-fry some vegetables (mixed peppers, aubergine and courgette) until cooked but firm.
- Season with salt and freshly ground black pepper.
- Sprinkle coriander on top and mix the couscous with the vegetables.
- Arrange a quarter of the mixture over each half of the Deli Wrap and carefully fold the sides inwards to enclose the filling, forming a cone shape.
- Tip: use cocktail sticks to hold together and serve immediately.
