Mediterranean Couscous Wrap

Ingredients

  • 1 Mission ‘Wheat & White’ Deli Wrap
  • 1 clove garlic
  • Mixed peppers, aubergine and courgette
  • Salt & pepper
  • Fresh coriander
  • Couscous

Instructions

  • Sauté some garlic for a minute and stir-fry some vegetables (mixed peppers, aubergine and courgette) until cooked but firm.
  • Season with salt and freshly ground black pepper.
  • Sprinkle coriander on top and mix the couscous with the vegetables.
  • Arrange a quarter of the mixture over each half of the Deli Wrap and carefully fold the sides inwards to enclose the filling, forming a cone shape.
  • Tip: use cocktail sticks to hold together and serve immediately.
